Bard, if you bake them before they break down better and get a more intensely sweet flavor, but it's also a lot of extra time to wait, maybe 45 minutes to bake and then cool them enough to mix in

Bananas are very sweet and soft, but by comparison plantains are quite firm and starchy even when they're ripe. You'd really never want to eat raw plantain
